No Sugar Orange Pineapple Glazed Ham

So much better than a commercially glazed ham... this tastes homemade. Its sweet yet it is sugar free! The entire family willl LOVE this sticky beautifully glazed ham.
Ingredients
- Jar of Smucker's Sugar Free Orange Preserves
- Fresh Pineapple cut into rings or chunks including ½ cup unsweetened juice
- 2 tablespoons Grey Poupon or Dijon mustard
- ⅛ teaspoon ground clove or 1 teaspoon whole cloves - you can simmer in the glaze or stick into the ham - I do both
- 1 tablespoon red wine vinegar
- Sea salt and freshly ground black pepper
Instructions
- Simmer together preserves, pineapple juice, mustard, cloves, vinegar, pinch of salt and a few grinds of pepper, until thick and syrupy, 20 to 25 minutes. Add pineapple and poach until softened, 5 to 7 minutes.
- Place several pineapple rings in the bottom of small baking dish to use as a bed for the ham. Poke a few whole cloves into the ham, if using and secure a couple of pineapple rings and maraschino cherries to the outside of the ham with toothpicks or skewers if desired. Roast in a high 425 degree oven until glaze thickens, browned edges are created, and ham is just heated through. Baste often with reserved glaze and DO NOT burn your glaze. Doneness depends on the size of your ham but a small ham of about 2 pounds takes just 20 to 30 minutes. Slice and serve with yummy pineapple slices.
